Washed
After pulping the cherries, the beans are fermented in water to remove mucilage, then carefully washed and dried. This produces clear cups with vibrant acidity and notes that reflect the terroir and variety. Key in specialty coffee for bringing out clean, bright flavors.

Honey
The coffee cherries are pulped, but some of the mucilage is left on the bean during drying. This provides sweetness, silky body and intense fruity notes, ideal for specialty coffees. It balances the cleanliness of the washed and the complexity of the natural.

Natural
The cherries are dried whole in the sun, allowing the bean to absorb the sugars from the pulp. This produces intense profiles with sweet, fruity and exotic notes, creating a unique specialty in coffee. It is the oldest and stands out for its complexity and body.
